Spicy Steak Ramen

Ingredients

A handful of beansprouts

250g of ramen noodles or any sized egg noodles

2 Medium pieces of steak (any preferred cut)

1 pint of beef or vegetable stock

2 tbsp of fish sauce

1 red chilli (sliced)

1 lime

A bunch of coriander

1 red onion

1 tbsp Waitrose spicy thai mix

Method

Blanch the beansprouts in a pan of boiling water for around 10 seconds then drain and refresh in cold running water

Add the stock ,Waitrose spicy thai mix, fish sauce and bring to boil for a few minutes then let the noodles & stock simmer on low for a few mins

Heat a griddle pan over a medium heat until hot

Rub the steak with oil, then cook for 2 minutes on each side until medium rare

Remove from the griddle, leave to rest for a minute then slice

Ladle the noodles and stock into bowls

Top with the beef, beansprouts, chilli, red onions, lime and the coriander
