Ingredients
For the spice mix
2 teaspoons of Chili Powder
1 teaspoon of Salt
2 teaspoons of Paprika
1 teaspoon of Brown Sugar
1 teaspoon of Ground Black Pepper
1 teaspoon of Onion Powder
1 teaspoon of Garlic Powder
1 teaspoon of Ground Cumin
1/2 teaspoon Cayenne Pepper
Other Ingredients
500g of beef shin
2 large peppers ( any colour )
1 large red onion
Half a cup of water
Drizzle of olive oil
Small flour tortilla wraps
Guacamole
1 avocado
Pinch of salt and pepper
Half of 1 lime
Salsa
2 large tomatoes ( make sure they are nice ripe as you will get a much better taste)
Handful of coriander
Pinch of salt & pepper
1 small red onion
Half of 1 lime
Method
Set your oven to 140c
Mix all ingredients for the spice mix together in a bowl then store in a airtight jar or container. The ingredients above will make more than what you actually need for this recipe so you will have some to store away for another day ( you will never need to buy mexican spice mix again once you have tried this recipe)
In a large bowl, place the beef and add 2 tbsp’s of the mexican mix with the drizzle of olive oil
Coat the beef with the mixture and place in a large casserole dish
Add the water to the dish and give a little mix
Pop on the lid and place in the oven for 4 hours ( give it a check every hour or so and add a little more water if it’s starting to look dry)
Once the beef is starting to naturally fall away add the sliced peppers and onion and leave to cook for another hour
It’s now time to start making the salsa and guacamole
For the guacamole, scoop out the avocado and mix in a dish with the salt, pepper and squeeze of lime
For the salsa, chop the onion, coriander and tomato finely then mix together in a bowl with the salt, pepper and lime
Once your beef is ready, give it a mix and remove any bone
Place the beef in a large serving dish in the middle of the table with the salsa, guacamole, tortilla wraps and enjoy
