Beef & Aubergine Dahl With Coconut & Spinach

Ingredients 

340g diced lean beef

1 tin of coconut milk

1 tbsp of fish sauce

1 tbsp of waitrose spicy thai mix

1 tin of lentils

1 tbsp of yellow or red thai curry paste

A handful of spinach

1 pack of green beans

1 red chilli

Half a pack of coriander

1 red onion

1 lime

1 large aubergine

Short grain, jasmine or sticky rice

Method

Heat a large pan over medium-high heat, add the beef and cook 5 minutes or until the beef starts to take colour

Place beef in a large dish

Return the pan to medium-high heat and add the onion & aubergine; saute for 5 minutes or until soft.

Spoon onions & aubergine over beef then add the coconut milk, spinach, lentils, spicy thai mix, fish sauce and thai curry paste

Cook on 120c for 6 hours ( check every few hours and stir)

Add the greens beans 15 minutes before cooking time ends

Once finished give it a good stir and make sure the aubergine has softened and become part of the sauce

Divide in to bowls then sprinkle with fresh coriander & red chilli

Serve with short grain, sticky or jasmine rice
